In art we meet the saints at their deaths. Brightly coloured scenes belie the vivid horror of their subjects: Saint Sebastian, his body bristling with arrows; Saint Lawrence bound and roasting on a gridiron … But if art relishes the bloody close-up, in music we meet the saints at a distance.
